Make Pomegranate Juice or a Pomegranate Smoothie?

Pomegranate’s and their seeds are known to be the ultimate disease fighting fruit. It’s very common to make a juice from the seeds, discarding the pulp. But the seeds are very high in Vitamin C and Vitamin K, and if you can eat the seeds in your diet, they are an excellent source of fiber as well micronutrients.

The challenge with Pomegranate seeds, they are tough to eat raw. So juicing is a common way to consume them, missing out on all the fiber and micronutrients. But using a pro grade blender like a Vitamix or a Blendtec, you can use the seeds whole, pulverizing the tough seed, and make a fantastic pomegranate smoothie.

Pomegranate seeds are the perfect tart accent to strawberries and together they are a free- radical fighting vitamin machine. The vanilla bean mellows out the fruit and the yogurt pulls the whole thing together.

Ingredients

  • 1/2 cup pomegranate seeds
  • 1/2 cup frozen strawberries
  • 1/2 cup Greek yogurt
  • 1/2 tsp vanilla bean
  • 1/4 cup ice

Directions

  1. Place all ingredients in blender and blend on high for 2-3 minutes, until smooth.
