Try this variation to homemade cinnamon rolls using Pumpkin. Pumpkins provide incredible amounts of Vitamin A. Every Halloween holiday provides for an abundance of pumpkin begging for a new recipe to try.

These pumpkin cinnamon rolls are perfect for a holiday breakfast and very easy to make. Using a blender helps speed up the mixing process and the rolls come out lighter and flakier when they are not over handled.

Ingredients

  • 2 cups flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 5 tbsp melted butter
  • 1/3 cup buttermilk
  • 1 cup steamed pumpkin
  • 1 tsp cinnamon
  • 3 tbsp brown sugar

Directions

  1. Combine all wet ingredients in blender and emulsify.
  2. Sift together dry ingredients and slowly add the blender mixture.
  3. Mix, knead lightly and shape into rolls.
  4. Bake at 400 degrees for 15 minutes.
